I find when I’m at the cottage I do a lot of cooking with fresh ingredients from local farm stands and farmers markets. The cottage is where I become creative with vegetables and I love the freedom that comes with cooking without a recipe! This weekend, I came up with Bacon Breakfast Tacos, which can really be made at anytime, not just for breakfast and you can make them with whatever ingredients you like or have on hand!
I’ll just come right out and say it, I have this thing for French food. Maybe it’s the perfect ambience in nearly all French restaurants and bistros, maybe it’s because French technique is simple and they let the ingredients shine, or maybe it has something to do with butter and their frequent use of it. One of my goals for 2017 was to eat healthier! I’m slowly getting into the groove of eating whole grains, less dairy and fewer sweets but it’s so hard when donuts and brioche are all I want! Just the other day I came across this Healthy Banana Bread recipe from Cookie & Kate and after testing it out myself and making some slight tweaks, I had to share because the result is guilt-free and utterly delicious!
